No, and that is deliberate. A script tag does the same job with nothing in your plugin list to update, conflict or break on a core update. If you prefer plugins for everything, a "header and footer scripts" plugin will hold the tag for you.

Most themes have a Custom Code or Header Scripts field under Appearance or Theme Options. Elementor has Custom Code under Templates. Several popular SEO and header-script plugins also provide one. Any of them works — the tag just needs to end up in your page head.

If you edit header.php in a parent theme directly, yes — an update can overwrite it. Use a child theme or a header-scripts field instead and it survives updates.

Yes. It reads your product pages like any other page, and if you add your products with prices in the dashboard it can quote them and take payment through your own Stripe, PayPal, Square or Authorize.Net account.
